Calamari Fettucini Alfredo August 12, 2007

This dish pairs great with a nice white or rose wine.
Ingredients
16oz fresh or frozen calamari
1 jar alfredo sauce
1 box of fettucini pasta
1/4 cup of chardonnay
1/4 cup of extra-virgin olive oil
1 Tbp of butter
1/2 cup of Parmigiano-Reggiano, grated
garlic, salt, pepper to taste
Method
1. In a stock pot, bring water to a rolling boil. Add pasta and a pinch of salt and cover until cooked.
2. Prep calamari by cutting across the tubes to make rings.
3. In a large saute pan, combine the olive oil, butter and garlic and calamari. Cook until calamari is opaque in color. Deglaze pan with chardonnay.
4. Drain pasta and add calamari into the stock pot (discard remaining oil in saute pan). Stir in jar of alfredo sauce and Parmigiano-Reggiano cheese and let stand for 1-2 minutes.
